Havana Chicken with Black Bean & Mango Salsa

Makes: 4 servings.
 

Ingredients:
 

1 cup Lawry's® Havana Garlic & Lime Marinade With Lime Juice

1 large jalapeno pepper, seeded and finely chopped

3 tablespoons chopped fresh cilantro, divided

4 boneless, skinless chicken breasts (about 1-1/4 lbs.)

1 medium ripe mango, peeled, seeded and chopped

1 can (15-1/2 oz.) black beans, rinsed and drained

1 medium tomato, chopped

2 green onions, thinly sliced

1 teaspoon Lawry's® Garlic Salt

 
Directions:
 

1. In small bowl, combine Lawry's ® Havana Garlic Lime Marinade With Lime Juice, jalapeno pepper and 2 tablespoons cilantro; set aside. In large resealable plastic bag, pour 1/2 cup marinade mixture over chicken; turn to coat. Close bag and marinate in refrigerator 30 minutes. Reserve remaining marinade mixture.

 

2. Remove chicken from marinade, discarding marinade. Grill or broil chicken, turning once and brushing frequently with 1/4 cup of the reserved marinade mixture, 10 minutes or until chicken is thoroughly cooked.

 

3. Meanwhile, in large bowl, toss remaining 1/4 cup reserved marinade mixture with remaining ingredients. Chill, if desired. To serve, top chicken with salsa.

 

Test Kitchen Tip: Jalapeno peppers can sting and irritate your skin; wear rubber gloves when handling and do not touch your eyes.
